We pick the clusters or part-clusters of grapes, some very ripe, some covered with noble rot, some of aszú quality, at the very end of the harvest in late October, early November. The more concentrated ones will become Édes (Sweet) Szamorodni.

Usually at the same time we also select the ripe and very ripe but healthy clusters
