THE CELLARS
These cellars on the lowest floor of the winery are cut into the rhyolite bedrock 10 metres below ground. The constant cool temperature (12˚C / 54 F year round), high humidity (90-95%) and soft black cellar mould (Cladosporium cellare, recently named Zasmidium cellare) on the walls ensure perfect conditions for the ageing of the precious wines. The Aszú wines mature in over a thousand oak barrels, lying near Eszencias, and bottled wines settling and ageing before sale.
